What You’ll Do
  • Prepare sushi, sashimi, rolls, and related menu items according to established recipes and standards
  • Ensure food quality, freshness, and presentation meet Hyatt brand expectations
  • Safely handle and store seafood and ingredients following food safety guidelines
  • Set up and maintain the sushi station for service, ensuring cleanliness and organization
  • Maintain proper knife care and workstation sanitation
  • Communicate effectively with kitchen leadership and front‑of‑house teams
  • Assist with inventory, prep work, and restocking as needed
  • Follow all health, safety, and sanitation regulations
  • Support a collaborative, team‑oriented kitchen environment

What We’re Looking For
  • 2–3 years of professional sushi cooking experience required
  • Strong knife skills and knowledge of sushi preparation techniques
  • Experience working in a high‑volume restaurant or hotel kitchen preferred
  • Understanding of food safety, sanitation, and proper seafood handling
  • Ability to work efficiently under pressure while maintaining quality
  • Team‑focused attitude with strong communication skills
  • Flexibility to work evenings, weekends, and holidays
  • A passion for culinary excellence and delivering memorable guest experience
