The Executive Sous Chef is responsible for cooking and preparing food according to recipes and production guidelines while adhering to food safety, food handling, and sanitation procedures. The individual should demonstrate and train on the Culinary Philosophy and Commitments of Restaura Hospitality. The Sous Chef will be able to safely handle knives and equipment such as grills, fryers, ovens, and broilers. The Sous Chef may be responsible for oversight or delegation of responsibilities within the culinary operation in the absence of the Executive Chef.
Key Responsibilities
- Lead, schedule, and assign daily work to the culinary team, ensuring clear execution and consistent productivity.
- Train and mentor team members on culinary techniques, recipe adherence, cooking methods, knife skills, food preparation, sanitation, and safety procedures.
- Direct, coach, and monitor staff performance; provide feedback on timing, quality, and preparation standards, and escalate employee relations or scheduling concerns when needed.
- Maintain strong communication between shifts to align production timelines, prep needs, and long-cook items.
- Ensure proper portioning, plating, and serving standards are understood and followed.
- Prepare, cook, and expedite a wide variety of menu items according to recipes and quality expectations.
- Demonstrate proficiency across multiple cooking methods, including baking, roasting, broiling, steaming, grilling, and sautéing.
- Ensure all meal components are ready on time and adjust production based on demand during peak and non-peak periods.
- Cut, trim, bone, and carve meats and poultry according to specifications.
- Maintain food quality standards by evaluating taste, appearance, and presentation.
- Uphold all company culinary standards and food safety protocols, including labeling, storage, and temperature control.
- Ensure food is stored properly in compliance with HACCP, sanitation guidelines, and company policies.
- Maintain a clean, organized, and sanitary kitchen at all times, including proper setup and breakdown for each shift.
- Report safety hazards or equipment issues immediately.
- Safely operate all kitchen equipment and train team members on proper usage.
- Communicate proactively with management regarding food quality, service concerns, and operational updates.
- Track production results and assist with ordering and planning needs.
- Ensure adherence to recipe specifications, portion sizes, expiration standards, and presentation guidelines.
- Deliver excellent customer service and maintain a positive, professional attitude at all times.
- Support front-of-house presentation to ensure a consistent and appealing guest experience.
Job Requirements
- Previous supervisory experience in a culinary or related role preferred
- Prior experience as a cook or in a similar position required
- Ability to work independently with minimal supervision
- Strong knowledge of food preparation, cooking methods, and food safety regulations (sanitation, handling, storage)
- Ability to obtain food safety certification (ServSafe preferred)
- Basic math and inventory skills
- Strong communication and interpersonal skills (written and verbal)
- Ability to lift, carry, push, and pull up to 25 lbs occasionally
- Culinary training or degree preferred
