JOB SUMMARY:
Responsible for assisting all Sous Chefs and senior cooks with duties. Ensure food is brought from the kitchen and supporting areas to the line in a timely manner. The Food Runner position ensures that the kitchen has the necessary items to prepare food. They are also responsible for running plated dishes to the dining room and either assisting the service person in serving the food to the guests or serving the guests directly.
JOB ESSENTIAL FUNCTIONS AND RESPONSIBILITIES:
Read and gather ingredients for recipes
Slice, dice, chop, and prepare raw products for service in the expo area at the direction of the Sous Chef or senior cook
Utilize portion control and measuring devices
Ensure the quality and presentation of food products prepared making sure that each dish being served meets the appropriate specs
Provide the highest quality of service to customers and associates at all times
Rotate food products to ensure freshness
Ability to read, understand and operate the KDS (Kitchen Display System) during service
Ability to identify all dishes on the menu with knowledge of how they are prepared, and ingredients used
Ability to lift service trays with plates to carry to the dining room
Understand all allergens associated with any products being served
Maintain a clean and organized work area
Follow local health department food code rules and regulations
Organize storage areas including dry storage, coolers, and freezers
Maintain par levels of operating supplies and food product for each workstation
Protect all company assets regarding waste, breakage, and theft
Read, understand, and fill food requisitions as needed
Operate and maintain kitchen production equipment in accordance with established guidelines and safety procedures
Identify meat (i.e., beef, fish, poultry, pork, etc)
Identify fruits and vegetables
Assist in organizing and setting up of line with cooks
Assist cooks with production and preparation as needed
Complete a task, even if overtime is involved
Ensure all required logbooks and temperature logs, are maintained and verified
Receive and examine inventory and supplies to ensure quality and quantity meet established standards and specifications
Properly maintain and store company inventory including utensils, cookware, and machinery
Share equipment with co-workers
Calibrate pH meters and thermometers
Maintain and replenish hot line, salad bar, dessert station and serve dessert
Provide fast, friendly, professional, and responsive customer service to team members
Maintain composure in a stressful environment
Adhere to regulatory, departmental and company policies/procedures in an ethical manner

MINIMUM QUALIFICATIONS:
High school diploma or GED preferred
Six months kitchen experience in a high-volume establishment preferred
Must demonstrate the following essential knowledge and skills:
Basic knowledge of food preparation techniques and kitchen equipment
Possess and maintain tools to perform the necessary job functions
Knowledge of sanitation standards and procedures
Able to attend to multiple priorities simultaneously
Must be able to operate the following kitchen equipment: stove, grills, fryers, and other utensils when preparing food
Neat, professional appearance with excellent personal hygiene
PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS:
Must be able to maneuver to all areas of the kitchen and food service areas
Must be able to tolerate areas with high temperatures
Must be able to respond to visual and aural cues
Must be able to read, write, speak and understand English
Must be able to be on feet for 8-hour shift
Must be able to bend, reach, kneel, twist and grasp items
Must be able to bend, stoop, reach, crouch, kneel, push and pull when rotating stock and cleaning work area
Must be able to tolerate areas containing varying noise and temperature levels, illumination, vibration, crowds, and air quality including secondhand smoke
Must be able to work a flexible schedule including weekends, evenings, and holidays
