This is a full-time, permanent onsite opportunity with our client located in Biloxi, MS.


We are seeking a senior-level Banquet Chef to lead high-volume, upscale banquet operations within a large, fast-paced hospitality environment. This role is responsible for all culinary execution, food quality, cost control, and team leadership for high-end player events, conventions, weddings, and corporate/social banquets.


Essential duties:

  • Execute and oversee all banquet menu production and presentation
  • Plan, order, and manage food product while maintaining quality and cost controls
  • Lead and develop a banquet culinary team (Sous Chef, Cooks, Steward)
  • Ensure strict adherence to sanitation, safety, and equipment maintenance standards
  • Manage food and labor costs; support seamless execution of large-scale events
  • Personally and through delegated duties, prepare all menu items for banquets.
  • Specify and order all food for banquet functions.


Cuisine Focus

  • Strong Southern regional cuisine (New Orleans, Cajun, Creole)
  • French, Italian, German, and Asian cuisines preferred


Requirements:

  • 15+ years of culinary experience
  • Proven success leading high-volume banquet operations (facilities exceeding 55,000 sq. ft. and $5M+ annual banquet revenue)
  • Casino, luxury hotel, resort, or convention background
  • Ability to successfully pass a background check and drug screening


Compensation & Benefits:

  • Salary: $70,000 to $90,000 depending on experience, education/certifications, and skills
