F&B Manager – Luxury Resort | Caribbean

A premier ultra-luxury resort set along one of the Caribbean's most coveted coastlines is seeking a charismatic and operationally driven F&B Manager to lead one of its most dynamic and high-energy outlets. This is a role for a natural host — someone who commands a room, energises a team, and turns every service into an experience.


About the Role

The F&B Manager is responsible for the full operational and people leadership of a high-volume, high-profile resort lounge. Reporting to the Director of Outlets, this individual will oversee a team of approximately 20–21 employees and manage an outlet that regularly services in excess of 300 covers per night, drawing a significant volume of external guests alongside the resort's in-house clientele.

This is emphatically a floor-first role. Approximately 80–85% of the Manager's time will be spent on the floor — engaging with guests, leading the team in real time, and driving service standards through presence and example rather than from behind a desk.


Key Responsibilities

Operations & Service Leadership

  • Oversee all day-to-day operations of the outlet, maintaining seamless, luxury-standard service across every shift.
  • Maintain a dominant floor presence — leading, coaching, and supporting the team in the moment.
  • Manage high-volume service periods with composure, driving efficiency without compromising guest experience.
  • Creatively maximise seating capacity while ensuring in-house guests are appropriately prioritised and the impact on external guests is thoughtfully managed.
  • Ensure the outlet is consistently set, staffed, and prepared to deliver exceptional service regardless of volume or complexity.
  • Oversee the execution of daily service briefings and in-the-moment training opportunities.

Guest Experience

  • Act as the face of the outlet — engaging warmly and confidently with guests, both in-house and external.
  • Proactively anticipate guest needs and resolve concerns with immediacy and grace.
  • Bring personality, flair, and genuine hospitality to every guest interaction.
  • Maintain a strong understanding of guest preferences, building rapport and loyalty through personalised service.

People Leadership & Team Development

  • Lead, motivate, and develop a team of approximately 20–21 employees, including an Assistant Manager, Supervisor(s), and line staff.
  • Navigate and positively channel the energy of a strong, experienced, and passionate team.
  • Build trust and cohesion within a team that is deeply invested in the outlet's success.
  • Deliver real-time coaching and feedback on the floor, reinforcing service standards through action rather than instruction alone.
  • Identify talent, support succession planning, and champion individual development within the team.
  • Collaborate with the Director of Outlets on team structure, including the potential addition of a further Supervisor.

Administrative & Financial Management

  • Manage scheduling, rostering, and workforce planning to meet the demands of a high-volume operation.
  • Monitor operational costs and contribute to budget management and financial reporting.
  • Maintain accurate records, compliance with health and safety standards, and adherence to resort policies.

Candidate Profile

  • Proven experience as an F&B Manager or equivalent, ideally within a luxury resort or high-volume upscale hospitality environment.
  • Demonstrated ability to manage complex, fast-paced operations with large team oversight.
  • Island or Caribbean experience is strongly preferred.
  • A magnetic personality — warm, confident, and charismatic, with the natural ability to engage both guests and colleagues.
  • An exceptional people leader who thrives on the floor and brings out the best in a strong, opinionated team.
  • Skilled in creative floor management and high-volume service optimisation.
  • Comfortable working in a predominantly guest-facing capacity with minimal time in the office.
  • Strong instincts for balancing in-house guest priorities with the seamless management of external covers.
  • Single status preferred; all candidates will be considered.

Compensation & Benefits


💰 Base Salary

USD $53,000 per annum + service charge and other benefits to be shared by the recruiter.
