GCI's Cook, under the direction of the Chef, will support exceptional food service operations at GCI’s Agulowak Retreat by preparing, cooking, and plating meals in accordance with established recipes, portion controls, and food safety and sanitation standards. This role contributes to a high-quality dining experience for guests and staff while maintaining a clean, organized, and well-stocked kitchen through daily cleaning, inventory support, and assigned deep-cleaning tasks.

Position’s Customer(s): Customers include retreat guests such as GCI customers, clients, employees, and other invited guests.

ESSENTIAL DUTIES AND RESPONSIBILITIES AT ALL LEVELS:

Food Preparation & Service:

  • Prepares and cooks entrées, soups, salads, baked goods, snacks, appetizers, and desserts for guests and staff.
  • Follows standardized recipes to ensure consistency in taste, quality, and presentation, including intentional plating and banquet service needs.
  • Assists other cooks with meal preparation and plating; collaborates with team members to ensure smooth and efficient service.

Sanitation & Kitchen Maintenance:

  • Maintains a clean, safe, and organized workstation. 
  • Assists with kitchen and meal service clean-up.
  • Performs daily cleaning of kitchen equipment, utensils, and surfaces in compliance with applicable health codes, regulations, and ADEC sanitation standards.
  • Completes assigned deep-cleaning tasks.

Inventory Support:

  • Assists with supply inventory by receiving, storing, rotating, and monitoring food and beverage supplies.

    • Ability to function as a skilled cook, capable of assisting in the production of nutritious, attractive, balanced meals, and baked goods for up to 35 people. 
    • Knowledge of standard practices and procedures for maintaining a safe and sanitary kitchen.
    • Familiar with company safety systems and Retreat safety policies.
  • SAFETY & SECURITY - Supports a safe work environment by following all workplace safety rules and guidelines; complies with applicable Security policies and procedures.
    • Stay current with company safety systems and Retreat safety policies.
  • TECHNICAL PROFICIENCY - Proficient computer skills and MS Office knowledge (e.g., Outlook, Teams, Word, Excel) to complete job duties effectively, such as using the company intranet and to accurately retrieve and input information into database or equivalents.

This role contributes to a high-quality dining experience for guests and staff while maintaining a clean, organized, and well-stocked kitchen environment in a remote retreat setting.

Minimum Qualifications:

Required: *A combination of relevant work experience and/or education sufficient to perform the duties of the job may substitute to meet the total years required on a year-for-year basis

  • High School diploma or equivalent.
  • Minimum of two (2) years of experience in a food service position. *
  • Completion of the following company provided courses within 30 days of start date:
    • First Aid/CPR/AED certification.
    • Alaska ServSafe certification.

Preferred:

  • Experience in hotel, resort, or remote camp kitchen environments. Associate degree from a culinary school equivalent vocational training.
  • Telecommunications or corporate retreat experience.

DRIVING REQUIREMENTS

This position may require access to reliable transportation for occasional travel between retail store locations, offices, worksites, or other locations as needed.

PHYSICAL REQUIREMENTS and WORKING CONDITIONS:  
  • This position requires living and working at a remote Alaskan retreat for a period of approximately five (5) months (room and board provided). 
  • Transportation to and from the retreat requires traveling by small aircraft and/or boat.
  • Must be willing and able to work seven (7) days per week. 
  • Position is physically demanding, requiring daily long hours of standing, food preparation, and service. 
  • Must be physically capable of safely and effectively performing a variety of functions involving moving, transporting, positioning, and maneuvering equipment, supplies, and loads of up to 50 lbs. 
  • Must be physically capable of performing job duties safely and effectively, such as cooking, baking, and cleaning.
  • Ability to work shifts as assigned.
  • Ability to accurately communicate information and ideas to others effectively.
  • Physical agility and effort sufficiently to perform job duties safely and effectively.
  • Ability to make valid judgments and decisions. 
  • Available to work additional time on weekends, holidays, before or after normal work hours when necessary. 
  • Must work well in a team environment and be able to work with a diverse group of people and customers.
  • Virtual workers must comply with remote work policies and agreements.

Cook – Bakery & Breakfast Specialist

Purpose of the Specialty Role: 

Under the supervision of the Chef, the Cook – Bakery & Breakfast Specialist performs advanced preparation and execution of breakfast service and baked goods for guests and staff at GCI’s Agulowak Retreat. This role ensures consistent quality, presentation, and timeliness of morning meal service and bakery production while maintaining strict adherence to established recipes, sanitation standards, portion controls, and ADEC health regulations. The position also supports kitchen sanitation, inventory management, and cross-functional coordination to deliver an exceptional retreat dining experience.

Specialty Duties & Responsibilities:

  • Bakery & Breakfast Production:
  • Prepares and bakes breads, pastries, muffins, rolls, desserts, and specialty baked goods.
  • Prepares hot and cold breakfast items including eggs, breakfast meats, cereals, fruits, and specialty dishes.
  • Develops and executes consistent morning production timelines to ensure on-time breakfast service.
  • Ensures accurate measurement, mixing, proofing, baking, and finishing of baked goods.
  • Applies intentional plating standards for breakfast and banquet-style brunch service as needed.
  • Monitors freshness, shelf-life, and quality of baked goods and breakfast offerings.
  • Collaboration & Service Support:
  • Assists Lunch Cook and other culinary team members with meal preparation, plating and transition to mid-day service. 
  • Coordinates early morning workflow to ensure seamless kitchen handoff to lunch/dinner shifts.
  • Communicates ingredient needs or production adjustments to the Chef.
  • Sanitation & Compliance:
  • Maintains a clean, safe, and organized workstation.
  • Performs daily cleaning of baking equipment, mixers, ovens, utensils, and surfaces.
  • Ensures compliance with applicable health codes, regulations, and ADEC sanitation standards.
  • Completes assigned deep-cleaning tasks.
  • Inventory & Supply Support:
  • Assists with receiving, storing, labeling, rotating, and monitoring baking and breakfast ingredients.
  • Tracks perishable breakfast items and communicates replenishment needs.
  • Additional Specialty Requirements:
  • Ability to work early morning shifts consistently.
  • Demonstrated understanding of baking fundamentals including yeast handling and temperature control.
  • Ability to produce attractive baked goods and breakfast offerings for up to 35 guests.
  • Ability to work independently during early production hours in a remote environment.

 

Cook – Lunch & Appetizer Specialist

Purpose of the Specialty Role:

Under the supervision of the Chef, the Cook – Lunch & Appetizer Specialist leads preparation and service of midday meals and appetizer offerings for guests and staff at GCI’s Agulowak Retreat. This role ensures timely execution of soups, salads, sandwiches, appetizers, and sack lunches while maintaining consistent quality, presentation standards, and compliance with health and sanitation regulations. The position supports efficient transition between breakfast and dinner service in a remote retreat environment.

Specialty Duties & Responsibilities:

  • Lunch & Appetizer Preparation:
    • Prepares and cooks soups, salads, snacks, entrées, and appetizers.
    • Prepares sack lunches and packaged meals as needed for excursions or travel.
    • Ensures consistent portioning and plating standards for individual and banquet-style service.
    • Maintains high standards for freshness, visual appeal, and balanced meal composition.
    • Manages timing to ensure efficient midday service flow.
  • Collaboration & Service Support:
    • Assists Dinner Cook with preparation and plating transition to evening service.
    • Coordinates with Bakery/Breakfast Cook to manage production overlap and workflow efficiency.
    • Supports smooth and efficient guest service through teamwork and communication.
  • Sanitation & Compliance:
    • Maintains a clean, safe, and organized workstation.
    • Assists with kitchen and meal service clean-up.
    • Performs daily cleaning of kitchen equipment, utensils, and food prep surfaces.
    • Ensures compliance with applicable health codes, regulations, and ADEC sanitation standards.
    • Completes assigned deep-cleaning tasks.
  • Inventory & Supply Support:
    • Assists with receiving, storing, rotating, and monitoring food and beverage supplies.
    • Monitors ingredient levels for high-turnover lunch items and communicates needs proactively.
  • Additional Specialty Requirements:
  • Ability to manage moderate-volume service during condensed lunch windows.
  • Strong organizational and time management skills.
  • Ability to prepare nutritious, visually appealing meals for up to 35 guests.
  • Ability to function effectively in a remote retreat setting with cross-shift coordination.
