We are seeking a Chef de Cuisine to serve as the engine of a new, landmark Italian destination in Birmingham, MI. Under the direction of Chef-Owner Luciano Del Signore, this restaurant is a tribute to the artigianato (craftsmanship) of Italy. Our kitchen is dedicated to the intersection of regional tradition and modern technique—where handmade pasta, pristine whole-fish preparations, expertly cooked cuts of meat and the seasonal bounty of Michigan are handled with obsessive precision.
The Role
As Chef de Cuisine, you are the bridge between the Chef-Owner’s vision and the nightly execution of the line. You will be responsible for building the systems, culture, and standards of a flagship opening from the ground up. This role demands a rare blend of creative soul and operational rigor.
Key Responsibilities
- Architect of Principles: Establish and maintain the highest standards for every plate, from a clean and elegant crudo to more complex, multi-element dishes.
- Culture Building: Recruit, mentor, and galvanize a brigade of cooks, fostering a kitchen environment that emphasizes precision, mutual respect and an ambition for excellence.
- The Opening Phase: Lead the "pre-opening" charge—standardizing recipes, organizing stations, and refining workflows to successfully navigate a highly anticipated launch.
- Operational Mastery: Take full ownership of the BOH P&L, including inventory management, labor cost control, waste reduction, etc.
- Sourcing & Stewardship: Act as a liaison with boutique purveyors and local farmers to ensure only the finest raw materials enter the kitchen.
The Ideal Candidate
- Pedigree: Proven leadership experience in ambitious fine-dining environments.
- Technical Depth: A profound, technical understanding of Italian regionality or a strong willingness to learn. Likewise, a flair for creativity and an ability to fuse your own point of view with the spirit of provincial Italian fundamentals.
